Particularities

Blanched almonds are raw, peeled almonds that are often used in the food industry in the form of slivers, flakes, chopped cubes or flour. To relieve the almonds of their natural brown skin, the untreated almonds are at first soaked in boiling water. In order to avoid that the almonds lose their bite or crunchiness, they are passed through a large colander after a maximum of one minute, quenched with cold water and afterwards peeled in a further processing step.
