Pumpkin seed oil – a speciality from Styria

Pumpkin seed oil is considered a Styrian speciality: the previous oil is made from the roasted seeds of Styrian oil pumpkins. Only oil produced in Styria from these special Styrian pumpkins can be called Styrian pumpkin seed oil.

The Styrian pressing process

The Styrians use a traditional pressing process: first, the pumpkin seeds are thoroughly cleaned and toasted. This step gives the pumpkin seed oil its uniquely nutty flavour, which makes it such a wonderful addition to cold and hot dishes. After the toasting process, stamp presses extract the oil from the seeds. The oil cake generated during this step can be ground into a fine flour later. 

Cold-pressing process

Cold-pressed pumpkin seed oil is not toasted. Instead, screw presses processed the seeds into a cold-pressed oil after the cleaning and sorting stage. This variety has a lighter, nearly transparent green hue and relatively little flavour. The colour and flavour differences between cold-pressed and toasted pumpkin seeds are apparent in the flour, too. While the toasted product has a greenish brown hue, the cold-pressed version is much lighter and almost completely green.
