Coconut flour – the blockbuster among our low-carb flours

07. April 2017

Constant change and ever-shifting dietary trends have increased the demand for coconut flour. During the gentle production process, the coconut pulp is desiccated, de-oiled and ground; coconut oil, a side product, is used in a wide range of sectors including cosmetics and food. Coconut flour has an extremely positive effect on the digestive system, as it is free from gluten, which makes it suitable for sufferers of Coeliac disease. Coeliac disease is an intolerance of wheat products, which can cause immunological reactions and even changes to the intestinal lining; the condition is also called “gluten-sensitive enteropathy”. Before researchers understood what exactly caused the condition, and the gluten-free diet was developed, up to 60 per cent of Coeliac sufferers died from their food intolerance. It is a life-long condition, which requires a complete change of diet. Consumers must not consume products made from the following types of grains:

  • Wheat
  • Emmer
  • Rye
  • Barley
  • Kamut
  • Spelt
  • Einkorn wheat
  • Grünkern spelt
  • (Oats)

But gluten is not limited to obvious products, such as bread and pasta: frequently, it is hidden in other foods, too. This includes thickening agents and the breadcrumbs on cutlets. Additional positive characteristics of coconut flours are its high fibre content, which can stimulate the digestive system and improve our cholesterol and blood sugar levels. It also contains extremely healthy fatty acids, which support the absorption of minerals and liposoluble vitamins by the body. Many consumers appreciate coconut flour as a healthy, delicious alternative to gluten-based flours for baking muffins, bread or cake. Thanks to its low fat content, it is distinguished by a subtle aroma similar to vanilla. In summary, coconut flour is:

  • gluten-free
  • rich in fibre
  • low in carbohydrates
  • flavoursome
  • and easy to process.

It is a perfect addition to the kitchen cabinet of anyone who likes cooking healthy food. The team of OPW Ingredients will be happy to advise you on all topics related to vegetable proteins.
